Hibiscus (West African Zobo) and Oreos Summer Ice Cream

Say hello to the best summer hibiscus ice cream recipe!! Starbucks released its very berry hibiscus recipe and that went viral on the internet. Hibiscus has become popular mainly for hibiscus tea recipes, which in West Africa, we call Zobo. Creamy, tropical, rich and can be made without traditional dairy or eggs. This recipe is a perfect replacement for your traditional summer berry ice cream. It also makes for a refreshing milkshake drink when melted down. I love making new flavours of homemade ice cream with traditional tropical ingredients. ,Friends and family really love them.

I also do love making ice creams that can easily be swapped with non-dairy substitutes such as coconut milk and coconut cream.  It is just as rich as making a traditional ice cream base for ice cream with milk, heavy cream and eggs but great for people with allergies, vegans, vegetarians or avoid dairy for other reasons.

Mix Hibiscus Powder with condensed milk

Hibiscus Flower

The Hibiscus flower is a very pretty flower, but it is also known to have a tart flavour. You can make teas from hibiscus flower or powder. You can also mix it in with other foods such as pies, noodles and cookies. Hibiscus has been around for generations . It drums up numerous medicinal and health benefits – even claiming to reverse signs of aging. These claims also include reduction of inflammation, help in inducing labor, lowering blood pressure and cholesterol and even weight control.

You can consume hibiscus as a tea, powder or a concentrate extract. This recipe uses hibiscus powder with deep chocolate flavour from oreos. You can replace the cream with coconut cream for a vegan summer hibiscus coconut ice cream. It usually gets ridiculously hot between June and September. This is just in time for signature hibiscus holiday (Juneteenth). Luckily, I currently live by the welsh bay, which is cooler than inner cities. Even so, it is so extremely hot, I am guessing it is going to be a summer of ice creams, popsicles and lollies.

Consuming Hibiscus

Hibiscus can be consumed as a tea or extract from dried hibiscus leaves or hibiscus powder. Dried leaves can be used for jam. making, teas and soups. Hibiscus powder can be added to smoothies and bakes.

Add some Crushed Oreo Chunks to your whipping cream

Making this delicious Hibiscus Oreo Ice Cream

For this recipe, you will need some crushed oreos and a table spoon full of Hibiscus powder. You can use whole milk and or coconut milk with heavy whipping cream. You can use coconut cream but firm it overnight in a really cool fridge. You want it firm not iced or blocked so that you cannot work with it.

🥢 Equipment

  • 1 9 inch Loaf Tin
  • 1 Food Zipper bag

🍜 Ingredients
  

  • 1 tbsp Hibiscus Powder
  • 50 ml Whole Milk or Coconut milk
  • 250 ml Condensed Milk
  • 500 ml heavy whipping cream
  • 10 double oreo cookies

🍰 Instructions
 

Make the Hibiscus cream

  • In a small bowl, dissolve hibiscus powder in whole milk and 50 ml of condensed milk
  • Stir until smooth

Make the ice cream

  • Whipp the cream until firm
  • Fold in the condensed milk
  • In a sealed zip bag, loosely crush the oreos (to your suitable bite size)
  • Add half the crushed oreos into the mixture and fold gently
  • Set aside

Layer

  • Layer the icecream (target 3 layers). After each layer, sprinkle some crushed oreos and drip some hibiscus cream. Swirl with a skewer before the next layer.
  • Do this until the last layer. Repeat until the pan is full
  • Freeze for at least 6 – 12 hours
