Here is a completely vegan and gluten free fonio recipe dessert made with Fonio grain.

How To Cook Fonio

To cook plain fonio, simply cook in boiling water and salt for about 5 – 10 mins. The cooking ratio for fluffy fonio is 1:1.5 (Fonio to Water (cup)). You can skip boiling in a pot using a microwave. However, my fonio recipe is beyond plan. With ingredients such as carrots, coconut milk and walnuts, this recipe is perfect Autumn/Fall. This recipe can also be breakfast or simply as a dessert but tastes exceptionally wonderful when served hot. It is a perfect dessert to end a great meal or just heavy enough to be eaten on its own.

How to Use Fonio Grain

Fonio has a nutty, slightly sweet flavor and can be used in a variety of dishes, including salads, porridges, stews, breads or made into a flour.   • Pyrex Bowl

🍜 Ingredients
  

  • 1 Cup Fonio
  • 2 Large Carrots
  • 1 (1/2) Cup Coconut milk
  • 3 tbsp Agave
  • 1 Cup Coconut Cream
  • 1/2 Cups Walnuts

🍰 Instructions
 

  • In a bowl, rub in the folio grain and grated carrots until completely mixed.
  • Add agave and coconut milk and mix it all up.
  • Cover and microwave for 10 mins or boil for 5 mins
  • While hot, pour in the coconut cream and mix. (Add more coconut cream until you achieve your desired porridge consistency)
  • Add walnuts and let cool down.
  • You can eat this warm or chilled.
