Oreo and Raspberry Cookies

Why would I want to make chocolate oreo cookies, isn’t that redundant? Well, the answer is No. Because we can add some personal flavours and ingredients we would not otherwise have in an average oreo. Although we missed the air fried oreos and biscuit dough trend here on @spicedharvest, this is also a good way t use up those half eaten oreo biscuit packs.

First you will need some berries. I choose raspberries because I think it goes really well with chocolate. You can use anything besides blueberries or blackberries. You do not need a lot of flour for this recipe and any type of flour would do. Just enough for structure but not too much it become stodgy or stiff. No sugar or sweetener is needed – the oreo biscuits are sweetened by themselves. Set aside and crush some crush raspberries for topping each biscuit before popping them in the oven.

You can take out the oreo cream before crushing but leaving them in adds an extra layer of sweetness. Do the same for the raspberries and roughly crush so that it is not to smooth but has some texture.

Also use butter to melt the chocolate not milk – this gives the cookies a soft texture. You can also use some chocolate baking powder with melted butter. Finally, the middle is not a filling but a splash of raspberry topping. So do not hollow the center or fill it. Simply press down lightly with your thumb and use a teaspoon to spoon the crushed berries around the cookies.

  • 1 9 INch Baking Tray

🍜 Ingredients
  

  • 154 grams Oreo Original Chocolate Sandwich Biscuits
  • 1 cup Raspberries
  • 1/4 cup Raspberries For topping
  • 150 grams Dark Chocolate
  • 85 grams unsalted butter
  • 1/2 cup plain flour

🍰 Instructions
 

  • Pre Heat your oven to about 160C

Crush the Oreos

  • Open oreo pack and transfer cookies into a ziplock bag
  • Using a rolling pin, roughly crush the oroes. Not into completely smooth, just a bit for crunch.
  • Transfer crushed oreos into a mixing bowl

Crush the berries

  • In another bowl, transfer 1 cup of raspberries and crush with your fingers.
  • Set aside
  • In a small bowl melt the butter and chocolate in a microwave or over a stove.
  • Now combine the oreos, berries and chocolate melt and mix thoroughly.
  • Add in the flour and mix.
  • Using an ice cream scoop, scoop onto a lined baking tray.
  • For each cookie, top with half a teaspoon of crushed raspberries and spread in a circle lightly.
  • Bake in the oven for 30-40 mins.
