This mixed berry rice pudding is inspired by the classic coconut rice pudding from Senegal.

Equipment

Ingredients

  • 1 cup of raspberries

  • 1 cup of blueberries

  • 1 cup of blackberries

  • 1 tablespoon of cornstarch

  • For the rice pudding

  • 1 cup of basmati rice

  • 3 cups of coconut milk

  • 1 tablespoon of sugar or honey

Instructions

Step 1

- start by per boiling rice first with 1 cup of water

- when that’s dried up, add in coconut milk n boil down until sticky n soft. Add more milk if needed.

- Add sugar or honey n set aside to cool.

Step 4: For the mixed berry sauce

- in a saucepan toss in all berries with a cup of water n boil until reduced. Like a jam but not as thick.

- add in cornstarch to thicken

- set aside to cool for 2mins

Step 7

- layer rice pudding and mixed berry sauce.
