As Autumn winds down, I have begun to make some of my favorite comfort foods for the cold weather times. One of my all time favorites is my version of a Classic Worldwide Favorite. I call it my Spiced Fall Mac and Cheese. It is so creamy, with a hint of spice, well, okay, more than a hint, it is spicy. That is just the way I like it. I really hope you do too.
This dish is not difficult to make, not much more than the classic dish is. This dish is creamy with a heat all it’s own. It can be eaten as a meal itself or served as a side with another dish. Oh, and we do not use some cheap boxed mix Mac and Cheese, we go for the gusto and make it from scratch. When you begin to hit the cooler tips, we all want that warm comfort food. All over the world, people add or combine their favorite ideas to come up with new ideas and versions of classic dishes.
It is possible to leave out some of the spices, for example the scotch bonnet. You only add what you and your family like the spice to be. Scotch bonnet is really hot, but I grew up eating it, so I am quite accustomed to the taste. Also, any type of pasta can be used in this dish. The elbow macaroni was what I happened to have in my pantry. A bowtie pasta, or swirly pasta would be good here. It would hold onto the sauce mix perfectly. You can use less herbs if you would like .
This can also eaten with other foods, or eaten as a meal itself. Small portions can be starters and larger portions as a main dish.
