Jollof Chicken and Pasta Casserole

Is there anyway besides rice to have Jollof? I don’t know who needs to hear this but ‘Jollof’ is not an accompanying keyword for rice only. You can have most savoury meals jollof style. So what is ‘Jollof’? Jollof is simply a cooked paste made from a combination of onions, fresh tomatoes and/or tomato paste and chillis (scotch bonets). These are blended together and cooked in oil for about 5-10 mins. The paste should look something like this:

Now this would look different is you blended all your ingredients as opposed to chopping them up like above. This jollof Casserole is just every bit of warm, spicy and holiday table ready. Just enough spice and heat to warm you up and taste for a complete meal.

For a vegan option, replace the sherreded chicken with some chopped oyster mushrooms and it is just perfect to go as is.

  • Non-Stick Cooking Pan

🍜 Ingredients
  

  • 1/4 Cup Extra Virgin Olive Oil
  • 1 Medium Red Onions
  • 1 tbsp Crushed Garlic
  • 1 tbsp Chicken Stock
  • 1 Long Leek
  • 1 Cup Coconut Cream
  • 1 Cup Penne
  • 80 Grams Mozerella
  • 100 Grams Grated Cheddar
  • 1 Scotch Bonet Optional
  • 1 tbsp Tomato paste
  • 1 Cup Shredded Cooked Chicken Breast
  • 1/4 Cup Topping Vegetables

🍰 Instructions
 

  • Boil the Penne until just a fork can just get through and set aside to drain
    1 Cup Penne
  • Chop or blend the red onions and scotch bonnets
    1 Medium Red Onions, 1 Scotch Bonet
  • In a non stick pan, heat up the olive oil
    1/4 Cup Extra Virgin Olive Oil
  • Add the chopped scotch bonnet, tomato paste and red onions to the heated oil and leave to cook down
    1 Medium Red Onions, 1 Scotch Bonet, 1 tbsp Tomato paste
  • Add Coconut cream and leave to cook for about 2 mins
    1 Cup Coconut Cream
  • Add Boiled Pasta and stir.
    1 Cup Penne
  • Leave to simmer and cook down for about 2 mins
  • Add the shredded chicken and stir
    1 Cup Shredded Cooked Chicken Breast
  • Transfer mix into the casserole dish
  • Use a fork to mash the mozzarella. You can use grated mozzarella as well
    80 Grams Mozerella
  • Stuff the pasta mix with the mozzarella. Careful not to stir so it does not melt quickly
  • Top with shredded cheddar cheese.
    100 Grams Grated Cheddar
  • Top with favourite vegetable and bake at 150C for 30-45 mins
    1/4 Cup Topping Vegetables
