These pancakes are probably the best pancakes from all over the world. They are sweet, scrumptious and healthy. The ingredients are the healthiest types we can use. You would never know by the flavor you get. The pancakes end up dense, yet fluffy. Plantains are similar to bananas, yet very different. A banana can be eaten raw, although, as children, my siblings and I would occasionally eat raw plantains, the plantain is better if you cook it. When I say use a soft plantain, please do, it has the most natural sugars still. You do want the plantain to be very ripe, they are easier to work with and carry a sweet taste rather than the sour taste of its unripe alternative. 

Plantain pancakes are made the same way you would make a plain banana pancake, these are so much more flavourful though. They will also soak up the syrup better since they are dense. These plantain pancakes are great for breakfast, but you could make a coconut sauce to top them with and have them as a dessert. One of the great things about plantains is that when you cook them, they become a little sweeter. If you are one of us that love pancakes, then you really need to try these Plantain pancakes, you may never go back to normal pancakes again. These are a wonderful treat if you have guests that stay overnight around the holidays. Your guests will enjoy the treat.

You are better off using a ripe plantain. This means that it should be turning slightly brown to be ripe enough to use.

Not really. Although plantain flour is essentially dried mulled plantains, using plantain flour would produce some else.

Equipment

  • Non-Stick Frying Pan

Ingredients

  • 1 Ripe Plantain (Overripe Preferably)

  • 2 Large eggs

  • 1 cup of almond milk

  • 1 Cup of Self Raising Flour (or Almond Flour)

  • 1 tbsp of baking powder (1 1/2 if using almond flour)

  • 1/2 tbsp baking soda

  • 100ml Honey

  • 1 tbsp Cinnamon

  • 1 tbsp ginger powder

Instructions

Step 1

Peel plantain and mash until all lumps are gone

Add eggs, milk and honey to plantain mash and mix until smooth

Melt the butter in a microwave or on a hot stove

Add Melted butter and mix thoroughly

In a clean bowl, mix flour, baking soda, baking powder, cinnamon and ginger powder and mix thoroughly

Add dry ingredients to wet ingredients

Coat a non-stick pan with some butter or coconut oil and heat up

Take a spoonful of pancake mix and fry on each side, flipping until golden brown

Let cool and top with fruit and cream
