For this chocolatey plantain brownies, you would need 3 large brown/darkened plantains and 500g of chocolate. Growing up in Nigeria, plantains were the norm. They were affordable, accessible and versatile. Nigerians had delicious recipes for plantains at every stage of the plantain’s growth circle – from unripe plantain porridge to beans and plantain porridge. You can virtually do with a plantain, almost everything your could do with a banana, but more. This is because plantains gives you savoury options.
This plantain brownie recipe happened because the UK’s heatwave was melting my chocolates and I needed to use them up. Plantain brownies are the perfect way to use up overripe plantains and melting chocolate. I always have overripe plantains at home and it was just natural to create this recipe with these two ingredients. This is like you would make a regular brownie but with plantain puree. Trust me, you can literally taste the grilled plantains in through the chocolate. You need some nice chocolate powder and just enough plain flour to give this chocolate dough some structure.
These brownies can be fudgy or cakey. I love fudgy brownies with crackling tops, but you can add more flour for a brownie with a bit more structure. I used three overripe plantains because I wanted a strong plantain flavour to come through. You can use two but use at least 1 and 1/2. Finally, you do not have to use cocoa powder. I used this for more chocolate, but you can use 3/4 cup of flour instead.
Sweet Plantain Brownies

- 1 9 inch square baking tin
🍜 Ingredients
- 1/2 Cup Cocoa Powder
- 1/2 Cup Plain Flour
- 500 Grams Dark Chocolate bars
- 3 Large Overripe Plantains
- 3 Tbsp Pistachio Butter
- 100 Grams Unsalted Butter
- 3 Large Eggs
- 1/2 Cup Walnuts/Pistachio Nuts Optional
- 1 Cup Honey
🍰 Instructions
- Pre-Heat your oven to 160C
- In a blender, peel and puree the three ripe plantains
- In a bowl melt the dark chocolate, unsalted butter, pistachio butter and Honey
- Let this cool down for about 2 – 5 mins
- Add the eggs 1 at a time and mix quickly after each one
- Add the plantain Puree to the mix and mix thorougly
- Mix the cocoa powder and plain flour in a separate bowl
- Add the dry ingredients to the chocolate mix and fold in gently
- Transfer the mix into a lined square baking tin
- Top with your favourite nuts, sprinkle or any topping of your choice
- Bake in a pre-heated oven at 160C for 45mins – 1 hour
