How to use Brown Teff Flour for Baking

Brown Teff flour has a crumbly consistency and would probably require twice the amount of regular flour to get the same structure. The downside is that you need a lot more teff flour to get any meaningful structure. However, since the dough is crumbly, you will always end up with something soft. Be careful so you do not end up with a stodgy dry pancake by adding too little liquid. You have to control the liquid to flour ratio so you have a workable batter that has structure.

Cook this on low to medium heat. I used Molasses for a deep rich flavor. You can also swap the brown sugar for honey but it you would have to increase the amount of brown teff flour. You have to use a spoon to control the edges of the pancake while it is in the pan.

🍜 Ingredients
  

  • 1 Medium Overripe Banana
  • 1 Large Egg
  • 200 ml Coconut Milk
  • 3 tbsp Coconut Oil
  • 1 tbsp Molasses
  • 1/2 cup Brown Sugar
  • 3 cups Brown Teff Flour
  • 1 tbsp Baking Soda

🍰 Instructions
 

  • Mash the overripe Banana with a fork in bowl.
  • Add the eggs, milk and coconut oil and stir.
  • Add the Molasses and Brown sugar and stir again.
  • Add the Brown Teff Flour and Baking Soda. You will end up with a slightly stick
  • Heat up a flat pan or a skillet pan to low to medium heat
  • Scoop 1 large table spoon onto the heated pan.
  • Wait until you see little bubbles on the top.
  • Using a flat spoon flip and cook for 1-2 mins on the other side.
  • Top with Maple Syrup, Honey or Caramel and Strawberries, Bananas or Berries
