Shito ‘pepper’ in Ga, a Ghanaian language from Accra. Shitor din meaning – black pepper also commonly called ‘shito’, is widely used as the name for the hot black pepper sauce ubiquitous in Ghanaian cuisine. Shito is a hot Ghanaian sauce made from ground fish, scotch bonnet’s and tomatoes. Shito is eaten as a condiment usually as a perfect compliment for a variety of meals. Most West Africans are chilli ninjas and we always look for gracious ways to throw in more chilli into our recipes. So the idea of a versatile chilli sauce that goes on everything is a no brainer. You can buy shito pre-made off the shelves or make a homemade jar which you can spice to your taste buds.
It really comes in handy, when you just can be bothered to make a marinade . I popped open the jar I had lying in my fridge and heated it up in some vegetable oil and some lemon juice. Got my seabass and simply soaked it in this shito marinade for about an hour and grilled in an oven for 45 mins. And it’s dinner time!!! You can use any fish for this recipe, it works the same. The oven times may differ a bit slightly but it comes out just as zesty and spicy. Add a zesty tang to your dinner table.
Ghanian Shito-Glazed Grilled Fish

- 9 Inch Oven Tray
🍜 Ingredients
- 100 Grams SeaBass/Salmon
- 5 tbsp Shito Sauce
- 2 tbsp Lemon Juice
- 3 tbsp Olive Oil
- 1 medium Garlic Clove
- 1/2 medium Red Onions
🍰 Instructions
- Preheat your oven to 180C
- In a sauce pan heat up the olive oil3 tbsp Olive Oil
- Chop the red onions and add to the sauce1/2 medium Red Onions
- Add the lemon juice and garlic2 tbsp Lemon Juice, 1 medium Garlic Clove
- Leave to simmer for 5 mins
- Your fish should be pre-prepared to your taste (de-boning, descaling and chopping if needed)
- If you are using chopped fish pieces, Add the fish pieces to the sauce.Let it sit for 1 hour.100 Grams SeaBass/Salmon
- Otherwise place the whole fish on an oven tray and using a brush rub the sauce around the fish covering every bit of it. Let it sit for one hour
- Pop it in a pre-heated oven and grill for 45mins
- Top with salt and spices and serve with lime juice.
